Oven Baked Chicken Thighs

4 servings; 258 mg. sodium per serving

1/4 cup no salt added tomato paste
2 Tablespoons lemon juice
2 Tablespoons water
1 teaspoon no salt added chili powder
1 teaspoon ground cumin
1/2 teaspoon turmeric
1/2 teaspoon black pepper
1/4 teaspoon salt
6 boneless, skinless chicken thighs (about 1 pound)

Prep. Instructions

1. Combine the first 8 ingredients in a small bowl; stir well.

2. Lightly grease an 8 x 8 x 2 inch baking dish.

Cooking Instructions

1. Preheat oven to 375 degrees F.

2. Brush tomato paste mixture generously onto both sides of the chicken thighs.

3. Place chicken thighs onto the greased baking pan. Bake, uncovered, 45 minutes. Serve.
