Leftover Meat Patties in Tomato Sauce


3 Servings; 213 mg. sodium per serving

(This recipe is a variation on Leftover Sweet Sour Meat Patties.)

1 Tablespoon healthy oil
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1 large clove garlic, chopped fine
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon sugar
2 servings leftover Meat Patties in Tomato Sauce
1 cup no salt added frozen corn
1/2 cup no salt added tomato sauce

Prep. Instructions

1. Place chopped onion, green bell pepper and garlic in a bowl.
2. Combine the oregano, basil and sugar in a separate bowl.
3. Chop leftover meat into small pieces. Place in a separate bowl.
4. Have all other ingredients on hand.

Cooking Instructions

1. Heat oil in a 9 inch skillet over medium-low heat. Add onion, green bell pepper and garlic. Cook until onion is tender, about 5 minutes, stirring often.

2. Add herb/spice mixture. Cook 1 minute, stirring constantly.

3. Add leftover meat and corn. Stir until well combined.

4. Add tomato sauce. Stir until well combined. Bring mixture to a bubbling point. Reduce heat to simmer. Simmer, uncovered, 10 minutes. Can serve over no salt added cooked rice or noodles.
